Ingredients

Scale
  • 12 ounces gluten-free noodles
  • 1 Tbsp avocado oil
  • 1 small yellow onion, finely chopped
  • 10 ounces baby bella mushrooms, sliced
  • 3 cloves garlic, minced
  • 2 tsp Italian seasoning
  • 1 3/4 cups low-sodium chicken broth
  • 1 cup full-fat canned coconut milk
  • 3 Tbsp gluten-free all-purpose flour
  • 2 Tbsp rice vinegar or cider vinegar or 1/4 cup white wine
  • 3/4 tsp sea salt (to taste)
  • 1 cup peas (canned or frozen)
  • 3 (5-ounce) cans tuna in olive oil, undrained
  • 1 cup grated cheddar cheese (or more to taste)
  • Optional Topping:
    • 1/2 cup super fine almond flour
    • 2 Tbsp avocado oil

Instructions

  • Preheat oven to 375°F (190°C).
  • Cook the gluten-free noodles according to package instructions. Drain and set aside.
  • In a large skillet, heat 1 Tbsp avocado oil over medium heat. Add the finely chopped onion and sliced mushrooms. Cook until the onions are translucent and the mushrooms are tender, about 5-7 minutes.
  • Add the minced garlic and Italian seasoning, cooking for an additional 1-2 minutes until fragrant.
  • Stir in the gluten-free all-purpose flour, creating a roux. Gradually add the low-sodium chicken broth, stirring constantly to avoid lumps.
  • Pour in the full-fat canned coconut milk and continue to stir until the sauce thickens.
  • Add the rice vinegar (or cider vinegar or white wine) and season with sea salt to taste.
  • Gently fold in the peas and undrained tuna, mixing until well combined.
  • In a large mixing bowl, combine the cooked noodles with the sauce mixture. Transfer to a greased baking dish.
  • Sprinkle the grated cheddar cheese evenly over the top.
  • For the optional topping, mix the super fine almond flour with 2 Tbsp avocado oil and sprinkle over the cheese layer.
  • Bake in the preheated oven for 20-25 minutes, or until the top is golden and the casserole is bubbling.
  • Remove from oven and let cool slightly before serving.

Notes

  • You can use any type of gluten-free noodles you prefer.
  • Adjust the amount of cheese to your taste preference.
  • For a dairy-free version, use a dairy-free cheese alternative.
