  • 6 bell peppers, any color
  • ½ pound lean ground beef
  • ½ pound Italian sausage
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can petite diced tomatoes (14 ½ ounces, with juice)
  • ½ cup white rice, uncooked
  • 1 ¼ cups water
  • 1 tablespoon Worcestershire sauce
  • ½ teaspoon Italian seasoning
  • Salt & pepper to taste
  • 2 ½ cups marinara sauce, divided
  • ½ cup mozzarella or cheddar cheese, shredded (optional)

Instructions

  • Preheat oven to 375°F (190°C).
  • Cut the tops off the bell peppers and remove seeds and membranes.
  • In a large skillet, cook ground beef, sausage, onion, and garlic over medium heat until browned.
  • Add diced tomatoes, rice, water, Worcestershire sauce, Italian seasoning, salt, and pepper. Bring to a boil.
  • Reduce heat and simmer for 15-20 minutes, until rice is tender.
  • Stuff the peppers with the beef mixture and place in a baking dish.
  • Pour 1 cup of marinara sauce over the peppers.
  • Cover with foil and bake for 45 minutes.
  • Uncover, top with remaining marinara sauce and cheese (if using), and bake for an additional 15 minutes until peppers are tender and cheese is melted.

Notes

  • You can substitute ground turkey or chicken for the beef and sausage.
  • For a vegetarian version, use a meat substitute or beans.
  • Serve with a side salad or crusty bread.
