6–8 fresh strawberries, hulled
8 fresh mint leaves
1 tablespoon sugar (or to taste)
1 ounce fresh lime juice (about 1 lime)
2 ounces white rum
Club soda or sparkling water, to top
Ice cubes
Lime wedges & mint sprig for garnish
In a sturdy glass or cocktail shaker, muddle the strawberries, mint leaves, and sugar together until the strawberries are broken down.
Add the lime juice and rum, and stir well.
Fill a serving glass with ice and pour the muddled mixture over it.
Top with club soda or sparkling water.
Gently stir, then garnish with a lime wedge and mint sprig.
Serve immediately and enjoy!
Adjust sugar based on the sweetness of the strawberries.
Use a cocktail muddler or the back of a spoon for muddling.
For a mocktail version, skip the rum and add more soda water.
