Tender slow cooker garlic butter beef bites and potatoes make a perfect one-pot meal! Juicy beef bites, buttery potatoes, and a garlic herb sauce are slow-cooked to perfection for a flavorful and hearty dish the whole family will love.

Ingredients

  • 2 lbs beef stew meat (cut into bite-sized pieces)
  • 1 lb baby potatoes (halved)
  • 4 tbsp unsalted butter (melted)
  • 4 garlic cloves (minced)
  • 2 tsp Italian seasoning
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper
  • ½ cup beef broth
  • 1 tbsp olive oil
  • Fresh parsley (chopped, for garnish)

Instructions

  1. Prepare Ingredients: In a large bowl, toss beef bites with olive oil, paprika, onion powder, salt, and black pepper until evenly coated.
  2. Brown the Beef: In a skillet over medium-high heat, sear the beef bites until browned on all sides. (Optional but adds flavor!)
  3. Add to Slow Cooker: Place seared beef and halved baby potatoes in the slow cooker.
  4. Make Garlic Butter Sauce: In a small bowl, mix melted butter, minced garlic, Italian seasoning, and beef broth. Pour over the beef and potatoes.
  5. Cook: Cover and cook on low for 6-8 hours or high for 4-5 hours, until beef is tender and potatoes are fork-tender.
