2 lbs beef stew meat (cut into bite-sized pieces)
1 lb baby potatoes (halved)
4 tbsp unsalted butter (melted)
4 garlic cloves (minced)
2 tsp Italian seasoning
1 tsp smoked paprika
1 tsp onion powder
1 tsp salt (adjust to taste)
½ tsp black pepper
½ cup beef broth
1 tbsp olive oil
Fresh parsley (chopped, for garnish)
Instructions
Prepare Ingredients: In a large bowl, toss beef bites with olive oil, paprika, onion powder, salt, and black pepper until evenly coated.
Brown the Beef: In a skillet over medium-high heat, sear the beef bites until browned on all sides. (Optional but adds flavor!)
Add to Slow Cooker: Place seared beef and halved baby potatoes in the slow cooker.
Make Garlic Butter Sauce: In a small bowl, mix melted butter, minced garlic, Italian seasoning, and beef broth. Pour over the beef and potatoes.
Cook: Cover and cook on low for 6-8 hours or high for 4-5 hours, until beef is tender and potatoes are fork-tender.
Serve: Garnish with fresh parsley and serve warm.
Notes
For added flavor, you can sprinkle grated Parmesan cheese over the dish before serving.
Use Yukon Gold or red potatoes for a creamier texture.
