  • 1 lb smoked sausage, sliced

  • 2 large sweet potatoes, peeled and cubed

  • 2 tbsp olive oil

  • 2 tbsp honey

  • 3 garlic cloves, minced

  • 1 tsp Dijon mustard

  • 1 tbsp soy sauce

  • ½ tsp smoked paprika

  • Salt and pepper, to taste

  • 1 tbsp fresh parsley, chopped (for garnish)

Instructions

  • Preheat oven to 400°F (200°C).

  • Toss sweet potatoes with olive oil, salt, pepper, and smoked paprika. Spread on a baking sheet and bake for 20 minutes.

  • In a small bowl, whisk together honey, garlic, Dijon mustard, and soy sauce.

  • Add sliced sausage to the baking sheet with the sweet potatoes, drizzle with the honey garlic sauce, and toss to coat.

  • Bake for another 15 minutes until caramelized and golden brown.

 

  • Garnish with fresh parsley and serve warm.

  • Use turkey or chicken sausage for a lighter version.
