1 mini watermelon
1 English cucumber
Salad Dressing
2 tbsp avocado oil or olive oil
3 tbsp maple syrup
2 tbsp lemon juice
1 cup basil leaves, tightly packed
½ cup mint leaves, tightly packed
½ tsp sea salt
½ tsp black pepper
Instructions
Slice peaches and watermelon into bite-sized pieces.
Peel and chop the cucumber.
In a large bowl, combine the peaches, watermelon, and cucumber.
In a small bowl, whisk together the avocado oil, maple syrup, lemon juice, sea salt, and black pepper.
Pour the dressing over the fruit and cucumber mixture.
