  • 3 tablespoons extra virgin olive oil, divided
  • 1/2 medium yellow onion, diced
  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • 2 cloves garlic, minced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground pepper
  • 1 cup uncooked extra long grain white rice
  • 1 large bunch fresh broccoli
  • 2 1/2 cups low-sodium chicken broth
  • 1 1/2 to 2 cups extra sharp cheddar cheese

Instructions

  • Heat 1 tablespoon of olive oil in a large pan over medium-high heat. Add the diced onion and cook until translucent.
  • Add the chicken pieces, season with salt and pepper, and cook until browned on all sides.
  • Stir in the garlic and cook for another minute.
  • Push the chicken mixture to one side of the pan and add the remaining olive oil.
  • Add the uncooked rice to the oil and toast for a few minutes.
  • Mix the chicken back in and pour in the chicken broth. Bring to a boil.
  • Reduce the heat, cover, and simmer for 15 minutes.
  • Add the broccoli on top of the rice and chicken, cover, and cook for another 5 minutes.
  • Sprinkle the cheddar cheese over the top, cover, and cook until melted.
  • Stir everything together and serve hot.

Notes

  • For a richer flavor, use homemade chicken broth.
  • Feel free to add other vegetables like bell peppers or carrots.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
