These Lasagna Roll Ups feature tender lasagna noodles filled with a creamy ricotta and spinach mixture, then rolled up and baked with marinara sauce and gooey mozzarella cheese. A perfect Italian dish that's easy to prepare and loaded with flavor, ideal for weeknight dinners or special occasions.

  • 12 uncooked lasagna noodles
  • 1 (24 ounce) jar marinara sauce
  • 16 ounces frozen spinach, thawed
  • 1 cup freshly grated parmesan cheese
  • 15 ounces ricotta cheese
  • 3 cups mozzarella cheese, divided
  • 1 large egg
  • 1/2 teaspoon salt
  • Pepper to taste
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon dried oregano
  • Optional: fresh basil, chopped parsley, to taste

Instructions

  • Preheat the oven to 375°F (190°C).
  • Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.
  • In a large bowl, mix the ricotta cheese, thawed spinach, 1 cup mozzarella cheese, parmesan cheese, egg, salt, pepper, garlic, Italian seasoning, and oregano until well combined.
  • Spread a thin layer of marinara sauce in the bottom of a baking dish.
  • Lay out each lasagna noodle and spread a portion of the ricotta mixture evenly over each noodle. Roll up the noodles.
  • Place the roll ups in the prepared baking dish, seam side down. Pour the remaining marinara sauce over the roll ups and sprinkle with the remaining mozzarella cheese.
  • Cover with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, until the cheese is bubbly and golden.
  • Garnish with fresh basil or chopped parsley if desired, and serve hot.

Notes

  • For added flavor, you can use a mix of Italian cheeses.
  • Make sure to squeeze out excess water from the thawed spinach to avoid a watery filling.
  • You can prepare the roll ups ahead of time and refrigerate before baking.
