  • 1 teaspoon Dijon mustard
  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher salt, plus additional to taste
  • ¼ teaspoon ground black pepper
  • 1-2 teaspoons hot sauce (such as sriracha), plus additional for serving
  • 2 green onions, sliced
  • Optional for serving: Non-fat plain Greek yogurt or sour cream, shredded cheddar cheese, cooked brown rice or cauliflower rice

Instructions

  1. Heat canola oil in a large skillet over medium heat.
  2. Add diced potatoes and cook, stirring occasionally, until they begin to soften and brown (about 10-12 minutes).
  3. Add ground beef to the skillet and cook until browned, breaking it up as it cooks.
  4. Stir in diced onion and red bell pepper, cooking until the vegetables are softened (about 5-6 minutes).
  5. Add Worcestershire sauce, Dijon mustard, smoked paprika, garlic powder, dried oregano, salt, black pepper, and hot sauce. Stir well to combine.
  6. Cook for another 2-3 minutes to allow the flavors to meld.
