This Garlic Parmesan Chicken and Potatoes recipe is a simple yet flavorful one-pan meal. Juicy, seasoned chicken pairs perfectly with crispy, golden potatoes, all coated in a rich garlic butter sauce and topped with Parmesan cheese. Perfect for busy weeknights!

Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 1 lb baby potatoes, halved
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • ½ cup grated Parmesan cheese
  • 2 tbsp unsalted butter, melted
  • 1 tbsp fresh parsley, chopped

Instructions

  • Preheat oven to 400°F (200°C).
  • In a large bowl, toss potatoes with 2 tbsp olive oil, half of the minced garlic, salt, pepper, and Italian seasoning.
  • In a separate bowl, coat chicken thighs with remaining olive oil, paprika, and a pinch of salt.
  • Arrange chicken and potatoes on a baking sheet. Bake for 35 minutes.
  • Remove from oven, brush with melted butter, and sprinkle Parmesan over potatoes.
  • Return to oven and bake for another 10 minutes until golden brown and crispy.
  • Garnish with fresh parsley and serve hot.

Notes

  • For extra crispiness, broil for 2-3 minutes at the end.
  • Substitute chicken breasts for thighs but reduce cooking time.
