  • 4 boneless, skinless chicken breasts

  • 1 cup grated Parmesan cheese

  • 1 cup breadcrumbs (panko or Italian)

  • 2 eggs

  • Salt and pepper to taste

  • 3 tbsp olive oil

  • 3 tbsp butter

  • 4 garlic cloves, minced

  • 1 cup heavy cream

  • ½ cup chicken broth

  • ½ tsp dried thyme (optional)

  • ¼ cup chopped parsley (for garnish)

Instructions

  1. Pound chicken breasts to even thickness. Season with salt and pepper.

  2. In a bowl, beat the eggs. In another bowl, mix breadcrumbs and Parmesan cheese.

  3. Dip each chicken breast in egg, then coat in the breadcrumb-Parmesan mixture.

  4. Heat olive oil in a skillet over medium-high heat. Cook chicken until golden and crispy, about 4–5 minutes per side. Remove and set aside.

  5. In the same pan, melt butter. Sauté garlic until fragrant (1 minute).

  6. Add heavy cream, chicken broth, and thyme. Simmer 5–6 minutes until thickened.

  7. Return chicken to the pan and spoon sauce over top. Simmer 2–3 minutes.

  8. Garnish with parsley and serve hot.
