This Chicken Tomato Pasta recipe combines tender chicken, fresh tomatoes, and perfectly cooked pasta for a flavorful, hearty meal. Perfect for weeknight dinners, it's quick, simple, and packed with savory goodness.

  • 300g chicken breast, diced
  • 200g pasta (penne or spaghetti)
  • 2 cups cherry tomatoes, halved
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/2 tsp chili flakes (optional)
  • 1/2 tsp dried oregano
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh basil, for garnish

Instructions

  • Cook pasta according to package instructions. Reserve 1/2 cup of pasta water, then drain and set aside.
  • Heat olive oil in a large skillet over medium heat. Add chicken and cook until browned and fully cooked, about 5-7 minutes. Remove and set aside.
  • In the same skillet, add garlic and cook until fragrant, about 1 minute. Add cherry tomatoes, oregano, chili flakes, salt, and pepper. Cook until tomatoes soften, about 5 minutes.
  • Return chicken to the skillet. Mix in the cooked pasta, reserved pasta water, and Parmesan cheese. Stir until well combined.
  • Garnish with fresh basil and serve immediately.

Notes

  • For extra flavor, use sun-dried tomatoes or add a splash of white wine to the sauce.
  • Use whole-grain pasta for a healthier option.
