Ingredients

  • 2 chicken breasts, thinly sliced
  • 1 green bell pepper, sliced
  • 1 red bell pepper, sliced
  • 1 onion, thinly sliced
  • 4 hoagie rolls
  • 4 slices provolone cheese
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • Optional: mushrooms, mayo, or hot sauce

Instructions

  • Heat olive oil in a skillet over medium heat.
  • Add chicken slices and cook until browned, about 5-7 minutes.
  • Season with salt and pepper, then remove from the skillet.
  • In the same skillet, sauté onions and peppers until soft.
  • Return the chicken to the skillet and stir everything together.
  • Place cheese slices on top of the mixture and allow to melt.
  • Toast hoagie rolls, then load them up with the chicken and veggie mixture.
