  • 8 oz penne pasta
  • 1 lb chicken tenderloins, sliced
  • 1/4 tsp salt
  • 1/4 tsp paprika
  • 3 garlic cloves, minced
  • 4 oz sun-dried tomatoes, chopped
  • 2 tbsp olive oil
  • 1 cup half-and-half (or 1/2 cup cream + 1/2 cup milk)
  • 1 cup shredded mozzarella cheese
  • 1 tbsp dried basil
  • 1/4 tsp red pepper flakes (or more to taste)
  • 1/4 tsp salt (plus more to taste)
  • 1/2 cup reserved pasta cooking water

Instructions

  • Cook the penne pasta according to package instructions. Reserve 1/2 cup of the pasta water.
  • Season the chicken slices with 1/4 tsp salt and paprika.
  • In a large skillet, heat olive oil over medium heat. Add the chicken and cook until browned and cooked through.
  • Add minced garlic and sun-dried tomatoes to the skillet, sauté for 1-2 minutes until fragrant.
  • Pour in the half-and-half (or cream and milk), and bring to a gentle simmer.
  • Stir in the shredded mozzarella cheese until melted and smooth.
  • Add the cooked pasta, reserved pasta water, dried basil, red pepper flakes, and additional salt to taste. Toss to combine.
  • Serve hot, garnished with fresh basil if desired.

Notes

  • Adjust the amount of red pepper flakes to your spice preference.
  • Substitute heavy cream if you prefer a richer sauce.
