Cheesy Hamburger Rice Casserole is a quick and easy weeknight meal featuring savory ground beef, creamy cheese, and tender rice. Perfect for family dinners!

Ingredients

  • 1 lb ground beef
  • 1 cup uncooked white rice
  • 2 cups beef broth
  • 1 can cream of mushroom soup
  • 1 can diced tomatoes
  • 1 cup shredded cheddar cheese
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  • Preheat oven to 350°F (175°C).
  • In a skillet, heat olive oil over medium heat. Add chopped onion and garlic, sauté until soft.
  • Add ground beef to the skillet, cook until browned. Drain excess fat.
  • Stir in uncooked rice, beef broth, cream of mushroom soup, diced tomatoes, salt, and pepper. Bring to a boil.
  • Transfer the mixture to a baking dish. Cover with foil and bake for 25 minutes.
  • Remove foil, sprinkle with shredded cheddar cheese. Bake for an additional 10 minutes, until cheese is melted and bubbly.
  • Let sit for 5 minutes before serving.

Notes

  • For added flavor, top with chopped green onions or fresh parsley before serving.
  • Can substitute ground turkey for a lighter version.
