1 lb ground beef
1 cup uncooked white rice
2 cups beef broth
1 can cream of mushroom soup
1 can diced tomatoes
1 cup shredded cheddar cheese
1 onion, chopped
2 cloves garlic, minced
Salt and pepper to taste
1 tbsp olive oil
Instructions
Preheat oven to 350°F (175°C).
In a skillet, heat olive oil over medium heat. Add chopped onion and garlic, sauté until soft.
Add ground beef to the skillet, cook until browned. Drain excess fat.
Stir in uncooked rice, beef broth, cream of mushroom soup, diced tomatoes, salt, and pepper. Bring to a boil.
Transfer the mixture to a baking dish. Cover with foil and bake for 25 minutes.
Remove foil, sprinkle with shredded cheddar cheese. Bake for an additional 10 minutes, until cheese is melted and bubbly.
Let sit for 5 minutes before serving.
Notes
For added flavor, top with chopped green onions or fresh parsley before serving.
Can substitute ground turkey for a lighter version.
