This broccoli chicken casserole recipe combines tender chicken, fresh broccoli, and a creamy, cheesy sauce baked to perfection. A wholesome, satisfying dinner option for busy weeknights or meal prep.

Ingredients

Scale
  • 2 cups cooked chicken, shredded or cubed
  • 3 cups fresh broccoli florets
  • 1 cup cooked rice or pasta (optional)
  • 1 cup shredded cheddar cheese
  • 1 cup cream of chicken soup (or homemade equivalent)
  • ½ cup milk
  • ¼ cup sour cream
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • ½ cup breadcrumbs (optional, for topping)

Instructions

  • Preheat your oven to 375°F (190°C) and grease a 9x13 baking dish.
  • Steam the broccoli florets until tender but still bright green. Set aside.
  • In a large bowl, mix cream of chicken soup, milk, sour cream, garlic powder, salt, and pepper. Stir until smooth.
  • Add the cooked chicken, steamed broccoli, and cooked rice/pasta (if using) to the mixture. Toss to coat evenly.
  • Transfer the mixture to the prepared baking dish. Top with shredded cheddar cheese.
  • If desired, sprinkle breadcrumbs on top for added crunch.
  • Bake for 25-30 minutes, or until the casserole is bubbly and the cheese is melted.
  • Let cool slightly before serving.

Notes

  • Swap cream of chicken soup with cream of mushroom for a different flavor.
  • Add cooked bacon or mushrooms for extra flavor.
  • This recipe freezes well—just thaw and reheat before serving.
