Instructions

  • In a large bowl, combine pitted and halved cherries with sugar, lemon juice, and a pinch of salt. Mix well.
  • Let the mixture sit for 10 minutes to allow the cherries to release their juices.
  • Stir in the instant pectin and raw honey until well combined.
  • Continue to stir for 3 minutes to ensure the pectin is fully dissolved.
  • Pour the mixture into clean jars, leaving ½ inch of headspace at the top.
  • Seal the jars with lids and let them sit at room temperature for 24 hours.
  • After 24 hours, transfer the jars to the freezer for long-term storage or the refrigerator for immediate use.
