  • 1/2 medium yellow onion, finely diced
  • 1 tablespoon minced garlic
  • 1 (15-oz.) can pinto beans, drained and rinsed
  • 1 (15-oz.) can kidney beans, drained and rinsed
  • 1 (15-oz.) can tomato sauce
  • 1 (15-oz.) can diced tomatoes
  • 3 tablespoons tomato paste
  • 1 tablespoon maple syrup
  • 3 tablespoons chili powder
  • 2 teaspoons garlic powder
  • 2 teaspoons ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 1 cup beef broth (or chicken broth/water)
  • Optional toppings: shredded cheddar cheese, Fritos, green onion

Instructions

  • In a large pot, brown the ground beef over medium heat.
  • Add the finely diced onion and minced garlic, cooking until softened.
  • Stir in the tomato paste, chili powder, garlic powder, cumin, smoked paprika, salt, and pepper. Cook for 2-3 minutes.
  • Add the tomato sauce, diced tomatoes, pinto beans, kidney beans, and broth. Stir well.
  • Bring the mixture to a boil, then reduce the heat and let it simmer for 30 minutes, stirring occasionally.
  • Serve hot with your choice of optional toppings like shredded cheddar cheese, Fritos, or green onions.

Notes

  • For a spicier chili, add cayenne pepper or diced jalapeños.
  • This chili can be made ahead of time and stored in the refrigerator for up to 3 days.
