  • 2 medium ripe but still slightly firm peaches, diced
  • 1 ripe but still slightly firm large avocado, diced
  • 1 large ear corn, kernels cut off (about ¾ cup corn)
  • 3 tablespoons finely diced red onion
  • 1 jalapeño, seeded and diced
  • 2 tablespoons finely diced cilantro
  • 1 lime, juiced
  • Salt & freshly ground black pepper, to taste

Instructions

  • Dice the peaches and avocado, ensuring they are ripe but still slightly firm.
  • Cut the kernels off the ear of corn.
  • Finely dice the red onion, jalapeño, and cilantro.
  • Combine the diced peaches, avocado, corn, red onion, jalapeño, and cilantro in a bowl.
  • Squeeze the lime juice over the mixture and season with salt and freshly ground black pepper to taste.
  • Gently toss to mix all ingredients together.
  • Serve immediately or chill for later use.

Notes

  • For a spicier salsa, leave the seeds in the jalapeño.
  • Can be served with tortilla chips, or as a topping for tacos or grilled meats.
