  • 1 (14.5 ounce) can chicken broth
  • 1 (18.75 ounce) can tomatillos, drained and chopped
  • 1 (16 ounce) can diced tomatoes
  • 1 (7 ounce) can diced green chiles
  • ½ teaspoon dried oregano
  • ½ teaspoon ground coriander seed
  • ¼ teaspoon ground cumin
  • 1 pound diced, cooked chicken meat
  • 1 (15 ounce) can white beans
  • 2 ears fresh corn, kernels cut from cob
  • Salt and black pepper to taste

Instructions

  • Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and garlic, and sauté until softened, about 5 minutes.
  • Stir in the chicken broth, tomatillos, diced tomatoes, green chiles, oregano, coriander, and cumin. Bring to a boil.
  • Reduce heat and simmer for 10 minutes.
  • Add the diced chicken, white beans, and corn kernels. Cook until heated through, about 10 minutes.
  • Season with salt and black pepper to taste. Serve hot.

Notes
