This hearty vegetable beef soup is packed with tender beef, fresh vegetables, and rich flavors. It's the perfect comfort food recipe for cozy nights.

Ingredients

  • 1 lb beef stew meat, cubed
  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 4 carrots, sliced
  • 2 celery stalks, sliced
  • 3 potatoes, diced
  • 1 cup green beans, trimmed
  • 1 cup frozen peas
  • 1 can (14 oz) diced tomatoes
  • 6 cups beef broth
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add beef and sear until browned on all sides. Remove and set aside.
  2. In the same pot, sauté onions, garlic, carrots, and celery until softened.
  3. Add beef back to the pot, followed by diced tomatoes, beef broth, thyme, oregano, bay leaf, and season with salt and pepper.
  4. Bring to a boil, reduce heat, and let simmer for 45 minutes.
  5. Add potatoes, green beans, and peas. Simmer for an additional 20 minutes or until vegetables are tender.
  6. Remove bay leaf and serve hot.

  • Substitute beef with ground beef or turkey for a lighter option.
  • Add more vegetables like zucchini or spinach for variety.
  • Store leftovers in an airtight container in the fridge for up to 4 days.
