Ingredients

  • Potatoes (russet or Yukon gold)
  • Olive Oil
  • Kosher Salt (or sea salt)
  • Bacon
  • Shredded Sharp Cheddar Cheese
  • Mayonnaise
  • Sour Cream
  • Green Onions
  • Salt
  • Pepper

Instructions

  • Preheat oven to 400°F (200°C).
  • Bake potatoes until tender, about 1 hour.
  • Allow potatoes to cool slightly, then scoop out the flesh.
  • Mix potato flesh with mayonnaise, sour cream, shredded cheese, and green onions.
  • Season with salt and pepper.
