This Turkey Lasagna recipe features lean minced turkey, spinach, and ricotta cheese layered between tender lasagna sheets.   • 500 g minced/ground turkey (1 lb)
  • 1 onion, diced
  • 1 carrot, grated
  • 2 garlic cloves, minced
  • 1 tin chopped tomatoes
  • 1 cup chicken stock/broth
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 bay leaves
  • 250 g ricotta cheese
  • 1 cup frozen spinach, thawed and drained
  • 30 g butter (2 tbsp)
  • 1 tablespoon plain flour
  • 250 ml milk (1 cup)
  • 1 teaspoon Dijon mustard
  • 50 g grated Cheddar cheese (¼ cup)
  • 50 g grated Parmesan cheese (¼ cup)
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon oil
  • 8 lasagna sheets

Instructions

  • Preheat the oven to 375°F (190°C).
  • Heat oil in a large skillet over medium heat. Add the onion, carrot, and garlic; sauté until softened.
  • Add minced turkey, cook until browned. Stir in chopped tomatoes, chicken stock, salt, pepper, and bay leaves. Simmer for 15-20 minutes.
  • In another pan, melt butter over medium heat. Stir in flour to form a roux. Gradually whisk in milk and mustard until smooth. Cook until thickened, then stir in cheddar cheese.
  • Mix the ricotta and thawed spinach in a bowl. Season with salt and pepper.
  • Assemble the lasagna by layering meat sauce, lasagna sheets, ricotta mixture, and cheese sauce. Repeat layers, ending with cheese sauce.
  • Sprinkle Parmesan cheese and parsley on top.
  • Bake for 35-40 minutes until golden and bubbly. Let stand for 10 minutes before serving.

Notes

  • You can substitute ground turkey with ground chicken.
  • For a gluten-free version, use gluten-free lasagna sheets and flour.
  • Add extra vegetables like zucchini or mushrooms for more texture.
