  • ¼ cup cornstarch
  • 1 tablespoon lemon juice

  • 2 tablespoons butter, cut into small pieces
  • 1 egg (for egg wash)
  • 2 pie crusts (store-bought or homemade)

Instructions

  • Preheat the oven to 375°F (190°C).
  • In a large bowl, mix the berries, sugar, cornstarch, lemon juice, and vanilla extract. Stir until berries are well coated.
  • Roll out one pie crust and fit it into a 9-inch pie pan. Pour the berry mixture into the crust.
  • Dot the berry filling with pieces of butter.
  • Place the second pie crust over the filling, crimp the edges, and cut small slits for venting. Brush with egg wash.
