Ingredients

  • 1 cup arugula
  • 5-6 basil leaves
  • 2 tomatoes, chopped
  • 1 avocado, sliced
  • 1 cucumber, chopped
  • 1 small green pepper, chopped
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • 1/4 cup chopped red onion (optional)
  • 1 tbsp sesame seeds, toasted
  • Salt and pepper to taste

Instructions

  • In a large bowl, combine the arugula, basil leaves, tomatoes, avocado, cucumber, and green pepper.
  • Drizzle with olive oil and lemon juice. Toss gently to combine.
  • Add the chopped red onion if using, and season with salt and pepper to taste.
  • Sprinkle the toasted sesame seeds on top.
  • Serve immediately, or chill for 10-15 minutes to allow the flavors to meld.
