  • 1 lb boneless, skinless chicken breasts (sliced into thin strips)
  • 1 red bell pepper (sliced)
  • 1 green bell pepper (sliced)
  • 1 yellow onion (sliced)
  • 2 tbsp olive oil
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Juice of 1 lime
  • Warm tortillas (for serving)
  • Optional toppings: sour cream, guacamole, shredded cheese, salsa

Instructions

  • Heat 1 tbsp of olive oil in a large skillet over medium-high heat.
  • Add sliced chicken and season with chili powder, cumin, paprika, garlic powder, onion powder, salt, and black pepper. Cook until browned and fully cooked (about 6-8 minutes). Remove from skillet and set aside.
  • In the same skillet, heat the remaining olive oil. Add bell peppers and onion, sautéing until tender-crisp (about 5-7 minutes).
  • Return the chicken to the skillet, mix everything together, and squeeze lime juice over the mixture.
  • Serve warm with tortillas and your favorite toppings.
