  • 1/3 cup kale, stems removed and chopped fine
  • Salt and pepper to taste

Instructions

  • In a large pot, cook bacon until crispy. Remove and set aside, leaving some bacon fat in the pot.
  • Sauté onion, carrots, celery, and garlic in the bacon fat until soft.
  • Add potatoes and chicken broth, then bring to a boil. Simmer until potatoes are tender.
  • In a separate pan, melt butter and whisk in flour to make a roux. Slowly add the heavy cream or half and half.
  • Stir the cream mixture into the soup and cook until thickened.
  • Add tarragon, kale, salt, pepper, and cooked bacon. Simmer for a few more minutes before serving.

  • Adjust the broth to ensure the potatoes are fully covered during cooking.
  • For a thicker soup, mash some of the potatoes before adding the cream mixture.
