For the Thai Peanut Dressing:

  • 1/4 cup creamy peanut butter

  • 2 tbsp soy sauce

  • 1 tbsp rice vinegar

  • 1 tbsp lime juice

  • 1 tbsp honey or maple syrup

  • 1 tsp sesame oil

  • 1 garlic clove, minced

  • 1 tsp grated ginger

  • 24 tbsp warm water (to thin dressing)

Instructions

  1. In a large bowl, combine cabbage, carrots, bell pepper, green onions, and cilantro.

  2. Add the shredded chicken and peanuts to the salad mix.

  3. In a small bowl, whisk together all dressing ingredients, adding water until desired consistency is reached.

  4. Pour the dressing over the salad and toss to coat everything evenly.

  5. Serve immediately or refrigerate for 30 minutes to enhance flavor.

  6. Top with additional peanuts and cilantro before serving.
