12 large sea scallops, cleaned and patted dry
2 tbsp olive oil
Salt and pepper to taste
1/4 cup fresh parsley, chopped
1/4 cup fresh basil, chopped
2 tbsp fresh lemon juice
1 garlic clove, minced
1/4 cup olive oil (for herb sauce)
Zest of 1 lemon
Heat olive oil in a large skillet over medium-high heat.
Season the scallops with salt and pepper.
Sear the scallops for 2-3 minutes per side, until golden brown and opaque in the center. Remove and set aside.
In a bowl, mix together parsley, basil, lemon juice, garlic, olive oil, and lemon zest.
