Cool down this summer with our Summer Cucumber Lime Cooler Drink Recipe – a refreshing, hydrating, and easy-to-make beverage made with crisp cucumber, fresh lime juice, and a hint of mint. This healthy summer drink is perfect for picnics, BBQs, or simply lounging by the pool.
1 large cucumber, peeled and chopped
1/2 cup fresh lime juice (about 4 limes)
2 tablespoons honey or agave syrup (optional)
2 cups cold water
1 cup ice cubes
Fresh mint leaves, for garnish
Lime slices, for garnish
In a blender, combine chopped cucumber, lime juice, honey (if using), and cold water.
Blend until smooth.
Strain the mixture through a fine mesh sieve into a pitcher to remove pulp (optional).
Add ice cubes and stir well.
Serve in glasses garnished with mint leaves and lime slices.
Adjust sweetness by adding more or less honey/agave.
For a sparkling version, use soda water instead of regular water.
Can be made ahead and chilled for up to 24 hours.
