  • 4 boneless, skinless chicken breasts
  • 1/2 cup cream cheese (softened)
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup spinach (chopped)
  • 2 garlic cloves (minced)
  • 1 tsp dried oregano
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Toothpicks (for securing)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix cream cheese, mozzarella, Parmesan, spinach, garlic, oregano, salt, and pepper until combined.
  3. Cut a pocket into each chicken breast, being careful not to cut all the way through.
  4. Stuff each chicken breast with the cheese-spinach mixture, securing the opening with toothpicks.
  5. Season the outside of the chicken with salt, pepper, and a drizzle of olive oil.
  6. Heat olive oil in a skillet over medium heat and sear the chicken breasts for 3-4 minutes on each side until golden brown.
  7. Transfer to a baking dish and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  8. Remove toothpicks, let rest for a few minutes, and serve.
