Streusel Crumb Topping:
2/3 cup all-purpose flour
1/3 cup light brown sugar
¼ teaspoon salt
¼ cup unsalted butter, melted
Strawberry Muffins:
1 cup all-purpose flour
¼ teaspoon salt
1 teaspoon baking powder
¼ cup vegetable oil
½ cup granulated sugar
1 large egg
½ teaspoon vanilla extract
½ cup Greek yogurt
1 ½ cups diced fresh strawberries
Cream Cheese Filling:
6 oz. cream cheese, at room temperature
3 tablespoons granulated sugar
1 teaspoon vanilla extract
1 teaspoon corn starch
Glaze:
¾ cup powdered sugar
1 ½ – 2 ½ teaspoons milk or cream
Instructions
Prepare Streusel Topping: In a bowl, mix flour, brown sugar, and salt. Add melted butter and mix until crumbly.
Make Muffins: Preheat oven to 375°F (190°C). Line muffin tin with liners. In a bowl, mix flour, salt, and baking powder. In another bowl, whisk together oil, sugar, egg, vanilla extract, and Greek yogurt. Gradually add dry ingredients to wet ingredients. Fold in diced strawberries.
Cream Cheese Filling: Beat cream cheese, sugar, vanilla extract, and corn starch until smooth.
Assemble: Spoon a tablespoon of muffin batter into each liner, add a teaspoon of cream cheese filling, and cover with more muffin batter. Sprinkle streusel topping over each muffin.
Bake: Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean. Let cool.
Glaze: Mix powdered sugar and milk/cream until smooth. Drizzle over cooled muffins.
