These Strawberry Cream Cheese Muffins are a perfect blend of sweet strawberries, creamy filling, and crunchy streusel topping. Ideal for breakfast or a sweet snack!

Streusel Crumb Topping:

  • 2/3 cup all-purpose flour
  • 1/3 cup light brown sugar
  • ¼ teaspoon salt
  • ¼ cup unsalted butter, melted

Strawberry Muffins:

  • 1 cup all-purpose flour
  • ¼ teaspoon salt
  • 1 teaspoon baking powder
  • ¼ cup vegetable oil
  • ½ cup granulated sugar
  • 1 large egg
  • ½ teaspoon vanilla extract
  • ½ cup Greek yogurt
  • 1 ½ cups diced fresh strawberries

Cream Cheese Filling:

  • 6 oz. cream cheese, at room temperature
  • 3 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon corn starch

Glaze:

  • ¾ cup powdered sugar
  • 1 ½2 ½ teaspoons milk or cream

Instructions

  • Prepare Streusel Topping: In a bowl, mix flour, brown sugar, and salt. Add melted butter and mix until crumbly.
  • Make Muffins: Preheat oven to 375°F (190°C). Line muffin tin with liners. In a bowl, mix flour, salt, and baking powder. In another bowl, whisk together oil, sugar, egg, vanilla extract, and Greek yogurt. Gradually add dry ingredients to wet ingredients. Fold in diced strawberries.
  • Cream Cheese Filling: Beat cream cheese, sugar, vanilla extract, and corn starch until smooth.
  • Assemble: Spoon a tablespoon of muffin batter into each liner, add a teaspoon of cream cheese filling, and cover with more muffin batter. Sprinkle streusel topping over each muffin.
  • Bake: Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean. Let cool.
  • Glaze: Mix powdered sugar and milk/cream until smooth. Drizzle over cooled muffins.
