    • ¼ cup granulated sugar
    • 6 tbsp melted butter
  • Cheesecake Filling:
    • 24 oz cream cheese, softened
    • 1 cup granulated sugar
    • 3 large eggs
    • 1 tsp vanilla extract
    • ½ cup sour cream
  • Strawberry Topping:
    • 2 cups fresh strawberries, sliced
    • ½ cup granulated sugar
    • 2 tbsp cornstarch
    • ¼ cup water

Instructions

  • Prepare the crust: Preheat oven to 325°F (163°C). Mix graham cracker crumbs, sugar, and melted butter. Press into a 9-inch springform pan. Bake for 10 minutes, then cool.
  • Make the filling: Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla and sour cream. Pour over the crust.
  • Bake: Place the pan in a water bath and bake for 55-60 minutes. Let cool completely, then refrigerate for 4+ hours.
  • Prepare the topping: Cook strawberries, sugar, cornstarch, and water over medium heat until thickened. Let cool, then spread over the cheesecake before serving.
