  • 12 oz pasta (penne, rigatoni, or your choice)
  • 1 lb spicy Italian sausage (casings removed)
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1 tsp red chili flakes (optional)
  • 1 can (14 oz) crushed tomatoes
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook pasta according to package instructions. Reserve 1/2 cup of pasta water and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add sausage and cook until browned, breaking it up into crumbles.
  3. Add diced onion and cook until softened, about 3 minutes. Stir in garlic and red chili flakes, cooking for another minute.
  4. Pour in crushed tomatoes and simmer for 10 minutes, stirring occasionally.
  5. Reduce heat to low and stir in heavy cream. Add cooked pasta to the skillet, tossing to combine. Use reserved pasta water if needed to adjust consistency.
  6. Stir in Parmesan cheese and season with salt and pepper.
  7. Garnish with fresh parsley and serve hot.

Notes

  • Adjust the level of spiciness by adding more or less chili flakes.
  • Use mild Italian sausage if you prefer a less spicy option.
