  • 1 lb ground beef
  • 4 medium potatoes, thinly sliced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 cup shredded cheddar cheese
  • 1 medium onion, diced
  • 1 can (10.5 oz) cream of mushroom soup
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • Salt and pepper, to taste

Instructions

  • Brown the ground beef in a skillet over medium heat, then drain the grease.
  • In a slow cooker, layer the sliced potatoes, followed by ground beef, kidney beans, diced tomatoes, onion, and garlic.
  • Spread the cream of mushroom soup over the top, sprinkle with paprika, oregano, salt, and pepper.
  • Cook on low for 6-7 hours or high for 3-4 hours.
  • During the last 30 minutes of cooking, sprinkle shredded cheese on top.
  • Serve warm and enjoy!

Notes

  • For extra flavor, use smoked sausage instead of ground beef.
  • Add a pinch of cayenne pepper for a spicy kick.
  • You can substitute kidney beans with black beans or pinto beans.
