  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 ½ cups chicken broth
  • 1 cup cream of chicken soup
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 cup frozen peas and carrots
  • 1 tsp paprika
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

  1. Place chicken breasts at the bottom of the slow cooker.
  2. In a bowl, mix chicken broth, cream of chicken soup, onion, garlic, paprika, salt, and pepper. Pour over the chicken.
  3. Add the rice and gently stir to combine.
  4. Cover and cook on LOW for 5-6 hours or on HIGH for 2-3 hours.
  5. In the last 30 minutes of cooking, stir in frozen peas and carrots.
  6. Once done, shred the chicken or leave whole, then fluff the rice. Serve warm!

  • For extra flavor, add a splash of lemon juice or top with fresh parsley.
  • Substitute cream of chicken soup with cream of mushroom soup if desired.
