  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 8 oz mushrooms, sliced
  • 3 garlic cloves, minced
  • 1/2 cup dry white wine
  • 1/2 cup chicken broth
  • 1/3 cup heavy cream
  • 1 teaspoon dried thyme or 1 tablespoon fresh thyme leaves
  • Salt and pepper, to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper, then cook for 5-6 minutes per side until golden brown. Remove and set aside.
  2. In the same skillet, melt butter and sauté mushrooms until browned, about 5 minutes. Add garlic and cook for 1 minute.
  3. Pour in the wine and let it simmer for 2 minutes, scraping the bottom of the skillet.
  4. Stir in chicken broth, heavy cream, and thyme. Simmer for 3-4 minutes until the sauce thickens slightly.
  5. Return the chicken to the skillet, spoon sauce over the top, and cook for another 5 minutes until fully cooked.
  6. Serve hot with your choice of side dishes like mashed potatoes or rice.

  • For a non-alcoholic version, substitute white wine with additional chicken broth or a splash of lemon juice.
  • Use cremini or button mushrooms for the best flavor.
