  • 1 pound beef short ribs
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 2 tablespoons all-purpose flour
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 onion, sliced
  • 1 clove garlic
  • 1 (12 fluid ounce) can or bottle stout beer
  • 1 cup beef stock

Instructions

  • Season beef short ribs with salt and pepper, then coat with flour.
  • Heat olive oil and butter in a large pot over medium-high heat. Add short ribs and brown on all sides. Remove and set aside.
  • In the same pot, add sliced onion and garlic. Cook until onion is soft.
  • Pour in stout beer and beef stock, scraping the bottom of the pot to release any browned bits.
  • Return short ribs to the pot. Bring to a boil, then reduce heat, cover, and simmer for 2-3 hours until the meat is tender.
