1 pound beef short ribs
1 teaspoon salt
½ teaspoon ground black pepper
2 tablespoons all-purpose flour
1 tablespoon olive oil
1 tablespoon butter
1 onion, sliced
1 clove garlic
1 (12 fluid ounce) can or bottle stout beer
1 cup beef stock
Instructions
Season beef short ribs with salt and pepper, then coat with flour.
Heat olive oil and butter in a large pot over medium-high heat. Add short ribs and brown on all sides. Remove and set aside.
In the same pot, add sliced onion and garlic. Cook until onion is soft.
Pour in stout beer and beef stock, scraping the bottom of the pot to release any browned bits.
Return short ribs to the pot. Bring to a boil, then reduce heat, cover, and simmer for 2-3 hours until the meat is tender.
Serve hot, garnished with fresh herbs if desired.
Notes
Use a good quality stout beer for the best flavor.
Serve with mashed potatoes or crusty bread to soak up the sauce.
