This Roast Beef Reuben recipe is a mouthwatering twist on the classic sandwich, featuring layers of juicy roast beef, sauerkraut, melted Swiss cheese, and creamy Thousand Island dressing on grilled rye bread. Perfect for a quick lunch or dinner!

  • 8 slices rye bread
  • 1 lb thinly sliced roast beef
  • 1 cup sauerkraut, drained
  • 8 slices Swiss cheese
  • 1/2 cup Thousand Island dressing
  • 2 tbsp butter, softened

Instructions

  1. Preheat a skillet or griddle over medium heat.
  2. Spread softened butter on one side of each slice of rye bread.
  3. On the unbuttered side of 4 slices, layer roast beef, sauerkraut, Swiss cheese, and a drizzle of Thousand Island dressing.
  4. Top with the remaining bread slices, buttered side out.
