  • 4 cups shredded green cabbage
  • 2 cups shredded red cabbage
  • 1 cup shredded carrots
  • 2 packages ramen noodles (noodles broken into chunks, seasoning packets reserved)
  • 1/2 cup sliced green onions
  • 1/2 cup toasted slivered almonds
  • 1/2 cup vegetable oil
  • 1/3 cup rice vinegar
  • 2 tablespoons sugar

Instructions

  • In a large bowl, combine the shredded green cabbage, red cabbage, and shredded carrots.
  • Add the broken ramen noodles and sliced green onions to the bowl.
  • In a separate bowl, whisk together the vegetable oil, rice vinegar, sugar, and the reserved seasoning packets from the ramen noodles.
  • Pour the dressing over the cabbage mixture and toss well to coat.
  • Add the toasted slivered almonds and toss again.
  • Chill in the refrigerator for at least 30 minutes before serving.

Notes

  • For extra crunch, you can add toasted sesame seeds.
