  • 4 eggs (beaten)
  • 16 oz canned pumpkin (not pumpkin pie filling, I use Libby's)
  • 1 1/2 cups sugar
  • 1 cup cooking oil
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 1 can cream cheese frosting (or homemade)

Instructions

  • Preheat the oven to 350°F.
  • In a large bowl, beat the eggs, pumpkin, sugar, and oil until smooth.
  • Mix in the flour, baking powder, baking soda, and cinnamon until well combined.
  • Pour the batter into a greased 9x13 inch baking pan.
  • Bake for 25-30 minutes or until a toothpick comes out clean.
  • Allow to cool completely before frosting with cream cheese frosting.
  • Cut into bars and serve.

Notes

  • Be sure to use plain canned pumpkin, not pumpkin pie filling.
  • For a homemade cream cheese frosting, mix 8 oz cream cheese, 4 tbsp butter, 2 cups powdered sugar, and 1 tsp vanilla extract.
