  • 4 slices bacon, cooked and crumbled

  • 2 (2 1/4 inch thick) center-cut, bone-in pork chops
  • 1 teaspoon olive oil
  • ¼ teaspoon salt
  • ⅛ teaspoon ground black pepper

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a small bowl, mix together the Gouda, bacon, parsley, and ⅛ teaspoon black pepper.
  3. Cut a pocket into each pork chop and stuff with the Gouda mixture.
  4. Secure with toothpicks if necessary.
  5. Heat olive oil in an oven-safe skillet over medium-high heat.
  6. Season pork chops with salt and ⅛ teaspoon black pepper.
  7. Sear pork chops in the skillet for 2-3 minutes on each side.
  8. Transfer the skillet to the oven and bake for 20-25 minutes, or until pork chops reach an internal temperature of 145°F (63°C).
  9. Let rest for 5 minutes before serving.
