These Peanut Butter Chocolate Chip Cookie Cups are a delicious treat made with classic pantry ingredients. 1/2 cup unsalted butter, softened
1/2 cup creamy peanut butter
1/2 cup brown sugar
1/4 cup granulated sugar
1 large egg
1 tsp vanilla extract
1 1/4 cups all-purpose flour
1/2 tsp baking soda
1/4 tsp salt
3/4 cup mini chocolate chips
Preheat oven to 350°F (175°C) and lightly grease a mini muffin tin.
In a large bowl, cream together butter, peanut butter, and both sugars until light and fluffy.
Beat in the egg and vanilla extract.
In a separate bowl, whisk flour, baking soda, and salt. Gradually mix into the wet ingredients.
Fold in chocolate chips.
Scoop 1 tbsp of dough into each muffin cup and gently press down.
Bake for 10–12 minutes or until golden. Let cool before removing from pan.
Don't overbake—centers will continue cooking in the pan.
Can be stored in an airtight container for up to 5 days.
