These Peanut Butter Chocolate Chip Cookie Cups are a delicious treat made with classic pantry ingredients.   • 1/2 cup unsalted butter, softened

  • 1/2 cup creamy peanut butter

  • 1/2 cup brown sugar

  • 1/4 cup granulated sugar

  • 1 large egg

  • 1 tsp vanilla extract

  • 1 1/4 cups all-purpose flour

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 3/4 cup mini chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a mini muffin tin.

  2. In a large bowl, cream together butter, peanut butter, and both sugars until light and fluffy.

  3. Beat in the egg and vanilla extract.

  4. In a separate bowl, whisk flour, baking soda, and salt. Gradually mix into the wet ingredients.

  5. Fold in chocolate chips.

  6. Scoop 1 tbsp of dough into each muffin cup and gently press down.

  7. Bake for 10–12 minutes or until golden. Let cool before removing from pan.

Notes

  • Don't overbake—centers will continue cooking in the pan.

  • Can be stored in an airtight container for up to 5 days.

  • Substitute mini peanut butter cups in the center for variation.
