Instructions

  • Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  • In a medium bowl, whisk together flour, baking powder, and salt.
  • In a large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, then vanilla extract.
  • Gradually mix in the flour mixture, alternating with milk. Fold in diced peaches and raspberries.
  • Divide batter evenly among cupcake liners and bake for 18-22 minutes until a toothpick comes out clean. Let cool.
  • For the frosting, beat butter until creamy, then gradually add powdered sugar and peach juice. Frost cooled cupcakes and garnish with raspberries.

Notes

For extra flavor, you can add a dash of cinnamon to the batter. Fresh or frozen peaches can be used, but fresh raspberries are recommended for the best texture.
