For the Muffins:
1 1/4 cup all-purpose flour
1 1/2 teaspoon baking powder
1/2 teaspoon salt
2/3 cup white sugar
1 cup chopped fresh (or canned) peaches, divided 3/4 and 1/4
1/2 cup milk
1 egg
1/4 cup vegetable oil
1 teaspoon vanilla extract
For the Streusel Topping:
1/4 cup all-purpose flour
3 tablespoons white sugar
1/2 teaspoon baking powder
1/2 teaspoon cinnamon
4 tablespoons cold unsalted butter
Instructions
Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
In a large bowl, whisk together the flour, baking powder, and salt.
In another bowl, beat the sugar, milk, egg, vegetable oil, and vanilla extract until well combined.
Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
Fold in 3/4 cup of the chopped peaches.
Fill the muffin liners about 3/4 full with the batter.
For the streusel topping, mix the flour, sugar, baking powder, and cinnamon in a small bowl. Cut in the cold butter until the mixture resembles coarse crumbs.
Sprinkle the streusel topping over the muffins and press lightly.
Top each muffin with a few pieces of the remaining peaches.
Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
For a more intense peach flavor, use fresh ripe peaches.
Ensure the butter for the streusel is cold to achieve the best crumbly texture.
