  • For the Muffins:
    • 1 1/4 cup all-purpose flour
    • 1 1/2 teaspoon baking powder
    • 1/2 teaspoon salt
    • 2/3 cup white sugar
    • 1 cup chopped fresh (or canned) peaches, divided 3/4 and 1/4
    • 1/2 cup milk
    • 1 egg
    • 1/4 cup vegetable oil
    • 1 teaspoon vanilla extract
  • For the Streusel Topping:
    • 1/4 cup all-purpose flour
    • 3 tablespoons white sugar
    • 1/2 teaspoon baking powder
    • 1/2 teaspoon cinnamon
    • 4 tablespoons cold unsalted butter

Instructions

  • Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  • In a large bowl, whisk together the flour, baking powder, and salt.
  • In another bowl, beat the sugar, milk, egg, vegetable oil, and vanilla extract until well combined.
  • Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  • Fold in 3/4 cup of the chopped peaches.
  • Fill the muffin liners about 3/4 full with the batter.
  • For the streusel topping, mix the flour, sugar, baking powder, and cinnamon in a small bowl. Cut in the cold butter until the mixture resembles coarse crumbs.
  • Sprinkle the streusel topping over the muffins and press lightly.
  • Top each muffin with a few pieces of the remaining peaches.
  • Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  • Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

  • For a more intense peach flavor, use fresh ripe peaches.
  • Ensure the butter for the streusel is cold to achieve the best crumbly texture.
