  • 12 oz orecchiette pasta
  • 1 lb Italian sausage (casings removed)
  • 3 cups fresh spinach
  • 3 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1/4 tsp red pepper flakes (optional)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the orecchiette pasta according to package instructions. Reserve 1/2 cup of pasta water and drain the rest.
  2. Heat olive oil in a large skillet over medium heat. Add sausage, breaking it into crumbles, and cook until browned.
  3. Add garlic and red pepper flakes to the skillet, cooking for 1 minute until fragrant.
  4. Toss in spinach, stirring until wilted.
  5. Add the cooked pasta to the skillet and mix well, adding reserved pasta water as needed to create a light sauce.
  6. Season with salt and pepper, sprinkle Parmesan cheese, and serve warm.

Notes

  • Substitute kale or arugula for spinach if desired.
