  • For the chicken:
    • 6 slices bacon (see note 1)
    • 2 chicken breasts (see note 2)
    • ¼ cup all-purpose flour
    • ½ teaspoon salt
    • ½ teaspoon black pepper
    • 1 tablespoon butter
  • For the Sauce:
    • 2 tablespoon butter
    • 1 onion finely chopped (see note 3)
    • ½ teaspoon dried thyme
    • 2 tablespoon dry sherry – optional (see note 4)
    • ¾ cups chicken broth/stock
    • 1 ¼ cups heavy cream
    • ½ teaspoon Dijon mustard (see note 5)
    • ¼ teaspoon salt
    • ¼ teaspoon black pepper

Instructions

  • Cook the bacon until crispy, then remove and set aside.
  • Season the chicken with salt and pepper, coat with flour.
  • Melt butter in the pan and cook the chicken until golden brown.
  • Remove the chicken and add more butter, then sauté the onions until soft.
  • Add thyme and sherry, cook until reduced.
  • Stir in chicken broth, heavy cream, Dijon mustard, salt, and pepper.
  • Return the chicken and bacon to the pan, simmer until sauce thickens.
  • Serve hot.

Notes

  • Bacon adds a smoky flavor; turkey bacon can be used for a lighter option.
  • Chicken thighs can be substituted for a juicier texture.
  • Shallots can be used in place of onions for a milder taste.
  • Omit sherry for a non-alcoholic version.
  • Adjust the mustard amount to taste preference.
