For the chicken:
6 slices bacon (see note 1)
2 chicken breasts (see note 2)
¼ cup all-purpose flour
½ teaspoon salt
½ teaspoon black pepper
1 tablespoon butter
For the Sauce:
2 tablespoon butter
1 onion finely chopped (see note 3)
½ teaspoon dried thyme
2 tablespoon dry sherry – optional (see note 4)
¾ cups chicken broth/stock
1 ¼ cups heavy cream
½ teaspoon Dijon mustard (see note 5)
¼ teaspoon salt
¼ teaspoon black pepper
Instructions
Cook the bacon until crispy, then remove and set aside.
Season the chicken with salt and pepper, coat with flour.
Melt butter in the pan and cook the chicken until golden brown.
Remove the chicken and add more butter, then sauté the onions until soft.
Add thyme and sherry, cook until reduced.
Stir in chicken broth, heavy cream, Dijon mustard, salt, and pepper.
Return the chicken and bacon to the pan, simmer until sauce thickens.
Serve hot.
Notes
Bacon adds a smoky flavor; turkey bacon can be used for a lighter option.
Chicken thighs can be substituted for a juicier texture.
Shallots can be used in place of onions for a milder taste.
