2 tbsp butter
1 tbsp olive oil
1 medium onion, diced
2 garlic cloves, minced
1/4 cup all-purpose flour
4 cups chicken broth
2 cups heavy cream
2 cups cooked shredded chicken
1 cup carrots, shredded
1 cup fresh spinach, chopped
1 lb gnocchi
1/2 tsp thyme
Salt and pepper to taste
Instructions
Heat butter and olive oil in a large pot over medium heat. Sauté onion and garlic until fragrant.
Stir in the flour and cook for 1-2 minutes, forming a roux. Gradually whisk in chicken broth and heavy cream until smooth.
Add shredded chicken, carrots, thyme, salt, and pepper. Simmer for 10 minutes.
Stir in gnocchi and cook for another 5-7 minutes until tender.
Add spinach and cook until wilted. Adjust seasoning as needed. Serve hot and enjoy!
Notes
For extra richness, substitute half of the chicken broth with milk.
