1/2 cup light brown sugar, packed
1/4 cup granulated sugar
2 large eggs, at room temperature
1/2 cup sour cream
1/4 cup milk
1 teaspoon vanilla extract
1 1/2 cups apples, peeled and chopped into 1/2-inch chunks
Instructions
Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners.
In a medium bowl, whisk together flour and cinnamon.
In a large bowl, beat butter, brown sugar, and granulated sugar until creamy. Add eggs one at a time, mixing well after each.
Mix in sour cream, milk, and vanilla extract.
Gradually add the flour mixture, mixing until just combined.
Fold in the chopped apples.
