  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels
  • 2 cups salsa
  • 2 cups shredded Mexican blend cheese
  • 8 small flour or corn tortillas
  • 1 cup sour cream
  • 1/4 cup chopped cilantro
  • 1/2 cup chopped green onions

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, cook ground beef over medium heat until browned. Add taco seasoning and mix well.
  3. Stir in black beans, corn, and 1 cup of salsa. Cook for 2-3 minutes.
  4. In a baking dish, layer tortillas, followed by the beef mixture, cheese, and remaining salsa. Repeat layers.
  5. Cover with foil and bake for 20 minutes. Remove foil and bake for another 10 minutes, until cheese is melted and bubbly.
  6. Let the lasagna cool for 5 minutes, then garnish with sour cream, cilantro, and green onions.
  7. Slice and serve warm.
